What to Do With Green Tomatoes
My CSA strikes again, delivering a food I'm not quite sure what to do with.
Make the green tomato cake tonight. Delicous! Batter seemed dry when I mixed it and I was a bit concerned but cake came out moist, spicy, and tasty. It drove the children crazy trying to guess what kind of cake it was. Won't tell them until after they taste it. I'm going to make a second one tomorrow to take in to work and surprise people! Luckily I have some more green tomatoes.
Added flaked coconut on the top. Took it out at 55 min so coconut wouldn't burn. Nice that it's a frosting free cake, my favorite.
