In the past, I've used potatoes for art only a few times. We have mostly carved letters out of potatoes and printed them for MLB illustrations.
grade 1 - In the Waldorf grade 1 Capital Letters block, we like to do "O is for Otter" and just stamp potato circles for otter faces. No carving necessary!

grade 7 - Potato printed letters are VERY useful when studying the invention of the printing press (without trying it, children don't get why letters must be carved in reverse), which can be done in Montessori in the 4th Great Lesson or Waldorf in the Age of Discovery. Note that this will take several hours!

grade 2 - I've also used potato printed letters for the illustration for the Jataka Tale "Foolish Words" as retold by Donna Simmons in her Animals Legends book. Note: This legend is also retold as "The Flight of the Beasts" in I Once Was a Monkey: Stories Buddha Told by Jeanne Lee.
